In the chronicles of flavors, the Office offers to guide you through the multitude of good local products, between Pérouges and Bugey. For this first episode, in a situation of confinement, we help you prepare a great video aperitif tray with only good things from local producers, always open

Episode 1: the 100% local aperitif platter

In these times of confinement, we are not going to lie to each other, not much else to do but eat, sleep and scrutinize Instagram to dream of your next stay.

So, to improve the ordinary and give a boost – by the way – to local producers, the office's team of gourmets went in search of good little products.(*) from our region, to be tasted by scrolling through the photos of landscapes of Perouges in Bugey.

In the end we said to ourselves that we were never going to have enough space in an article, and that gluttony is good all year round, so we will make episodes for you, depending on what falls under the tooth !

Ready to salivate? So, as one of our colleagues would say: "on the menu of the day", Sabrina shares her aperitif tray with you, to make friends angry in video!

Taste local products

Here the good cheeses!

We can't talk about aperitif platter without starting with the cheese (sorry for the intolerant)! With us, this is not what is missing.

I suggest you start with the little goat cheese cabochons from the Gaec du Trolliet. Just the right amount of dryness, a little taste of hay and come back to it. Be careful, it disappears as if by magic. In sandwiches, we spread their fresh goat cheese, plain or flavored on fresh bread! Next time, we will give you the comparative merits of the territory's flavored goats. But be aware that you can also find it in organic version at the Abergement goat farm.

But if you really want to awaken your taste buds, and surprise your guests at the end of the lockdown, you need to get tomme with flowers from the Dairy of Ordonnaz. Already all these multicolored flowers makes a very nice cheese, then this little taste of flowery meadow, it's a treat! It's like being in the middle of a mountain pasture, sitting on a rock, breathing in the smell of tall grass.

Who said "charcuterie"?

(allergic and people who do not eat meat, sorry appointment to the next point).

Good sausage this is the specialized brand for you. Quality dry sausages and sausages (good), plain or flavored (small mention for the one with Beaufort). My recommendation: the pepper steak! A kind of pebble with 3 peppers or herbs. Yum !

Otherwise the Farm Chassard offers a rosette, each slice of which is the size of a coffee cup saucer. Along the way, do not hesitate to taste the country terrine. Go your way if you are on a salt-free diet, it's rustic charcuterie!

 If not, can we have fibers?

To complete this aperitif tray in a healthy way, and give it some pretty colors, we spend Friday evening at the desert garden stock up on crunchy vegetables fresh from the ground. Here the vegetables have a twisted head, and this is a guarantee of quality. So we grab the seasonal vegetables, cut them into strips to dip in… a farm yoghurt sauce!

We hope it will have made your mouth water and made you want to taste all these good products. After that, your video aperitifs will be even better thanks to these local nuggets. If not, a little more patience to get all these sweets and celebrate the liberation with dignity when the time comes.

The gourmet touch

Sabrina's Trick : add a drizzle of honey to the fresh plain goat cheese. It wows the guests. For that, I recommend you the mounting flower honey of the GAEC Prevost, which fits very well. Here again, a special episode is dedicated to the delicious honeys of our many beekeepers (nearly ten Pérouges in Bugey).
