Welcome to “The House of the Ramequin”! The ramekin is a cheese to be melted only, a heritage rich in meaning!

La Laiterie la Côtière has been making it in its workshop in Saint-Rambert-en-Bugey since 2018.
"Ramequin" in bugiste patois means "melted cheese", and the valley of Saint-Rambert-en-Bugey is the cradle of its manufacture.

The ramekin from the St-Rambert cheese factory is labeled “Saveurs de l’Ain” and “Région dugust”.

New ! The cheese shop also offers the grated ramekin, easier and quicker to melt.

For purists, the traditional ramekin roll is always in order.
The cheesemaker's advice: one or two ramekins per person.
The cheese factory's products are available throughout France, thanks to the merchant website www.laiterielacotiere.fr (secure payments).
You can choose your products from home and have them delivered to your home.
Currently, the Côtière dairy has: 5 points of sale, including 1 online store, 1 market and 2 manufacturing workshops.
It has 38 employees for no less than 10 different professions!
In Meximieux, Aranc, Saint-Rambert-en-Bugey or Bourg en Bresse, you will inevitably find cheese to your liking.

Originally, the bugiste farmers, after making their butter, collected the remaining skimmed milk to make this unique little cheese. Once dry, it was washed with water until an almost translucent ocher color was obtained. Rich in protein, the ramekin often replaced meat.
Products ordered on the website of La Laiterie de la Côtière are to be collected exclusively from the Meximieux point of sale or allow delivery in metropolitan France.

Traditional recipe:
A roll / grated: for 3 to 4 people
A small clove of garlic per person
A large teaspoon of butter
At least 250ml of water
Pain the campaign
Pepper

In a fondue pot, gently melt the butter with the chopped garlic.
Still over low heat, add the grated ramekin.
When it begins to melt, add the water little by little while stirring it, until it is completely dissolved.
Season as desired.
If the ramekin is too strong for your taste, you can add one last ingredient.
Some choose to add fresh cream...
The ramekin is accompanied by a local red wine, a cooked sausage and a salad.
